Italian "sformato" is and easy savory flan, often made with mashed potatoes and other ingredients. The filling can always vary, making it particularly handy if you have some ingredients in your fridge to finish.
1 shallot, finely sliced
2 tablespoons extra virgin olive oil
2 middle size zucchini (about 400g) sliced in rounds
20g butter, for the pan
4 tablespoons breadcrumbs, or as needed
4 tablespoons grated Parmesan cheese
salt and pepper, to taste
4 slices (about 100g) mozzarella cheese
2 slices (about 50g) ham

Brush under tap water then cook the potatoes in boiling water until you can easily pierce with a fork, about 15 minutes with a pressure cooker or 25 with a regular saucepan. Peel and mash. Set aside to cool.
Cook the shallot in a pan with oil on low heat for a few minutes. Add the zucchini, stir to coat in oil and cook on medium heat until soft, about 15 minutes. Add salt and set aside to cool.
Preheat oven to 200 degrees C. Grease a 20X30cm baking pan with butter and dust with half of the breadcrumbs.
In a large bowl stir mashed potato, zucchini, eggs, Parmesan, salt and pepper to taste.
Pour half of the mix on the bottom of the baking pan, add mozzarella and ham and cover with the remaining potato and zucchini mix to seal the filling. Sprinkle with remaining breadcrumbs
Bake in the preheated oven for 40 minutes or until firm and golden. In the last 5 minutes, grill the top or move the pan on the upper rack so it gets more colored on the top.
Remove from oven, let rest until lukewarm and server.
