Rose Del Deserto (Italian Corn Flakes Cookies)

    Have you ever seen a desert rose? Well, these Italian cookies look just like them (rose del deserto in Italian). Made with corn flakes and nuts are a tasty treat to accompany a tea or coffee.

    Serves: 6 

    • 125g butter, room temperature, cubed
    • 150g sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 250g plain flour
    • 100g potato starch
    • 1 package (16g) baking powder
    • 200g cornflakes, divided
    • 1 handful raisin or chopped almonds or pine nuts (optional)
    • 1 pinch salt
    • icing sugar, as needed

    1. Preheat the oven to 180 degrees C. Line a baking tray with baking paper.
    2. Place the butter in a bowl with sugar and vanilla then beat with an electric beater until fluffy.
    3. Add the eggs, one at the time, the beating well in between each addiction. Sift in flour, potato starch, baking powder and salt and mix well.
    4. Gently stir in 100g of cornflakes cereals and if using, raisin, almonds or pine nuts. Pour the remaining cornflakes in a shallow dish.
    5. Take a spoon of the mix, roll between you palms and then roll in the cornflakes. Lay on the prepared baking tray and proceed the same way, making more balls and placing 2-3cm apart.
    6. Bake in the preheated oven for 10 to 15 minutes or until pale golden.
    7. Remove from oven, cool on a rack and dust with icing sugar.


    Store the cookies in an air tight container, up to 6-7 days.
