Homemade Flaxseed Donuts

    Great homemade donut taste with a twist that the kids will never notice! Flaxseeds make it that little bit healthier.

    Ingredients
    Serves: 18 

    • 3 cups plain flour
    • 1/2 cup ground flaxseed
    • 1 tablespoon baking powder
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 2 eggs
    • 1 cup white sugar
    • 1 cup buttermilk
    • 2 tablespoons vegetable oil
    • 1 litre vegetable oil for frying

    1. Whisk the flour, flaxseed, baking powder, nutmeg and cinnamon together in a bowl until evenly blended then set aside.
    2. Beat the eggs and sugar together in a separate bowl then whisk the buttermilk and 2 tablespoons of vegetable oil into the egg mixture. Stir the flour mixture into the egg mixture until no lumps of flour remain and the dough is firm enough to handle. Cover the bowl and refrigerate at least 10 minutes.
    3. Roll the dough to 1cm thickness on a generously floured surface. Use a floured donut cutter to cut donut shapes out of the dough. Let the donuts stand for 5 to 10 minutes as the oil heats.
    4. Heat the frying oil in a deep-fryer or large saucepan to 180 degrees C.
    5. Fry the donuts in the hot oil in batches until golden brown on both sides, about 2 minutes per side. Drain on a paper towel lined plate before serving.

    I have never made donuts before, and thought I'd try this one as I like flaxseed and sneaking it in things that my kids eat. They came out good. I'll have to try other recipes to see how it compares. It seemed not very stiff to make the shapes, and I didn't have the right kind of cutters, so I just dropped in spoonfuls. They were yummy. I also didn't have a thermometer to test the temp, but waited until it seemed hot. Not so bad for first time, I thought.     I made these with an electric mini doughnut griddle instead of frying, so that probably changes the taste. Made this way, these donuts definitely tasted healthy, so I wouldn't recommend them to Krispy Kreme fans without heavy frosting. If you're looking for a less sweet doughnut, these work well after a roll in 1:3 cinnamon sugar.  -  26 Jul 2011  (Review from Allrecipes USA and Canada)
