Saute onion in a generous dash of vegetable oil, with the garlic, salt, pepper and 2 Tabs of the mixed herbs until the onions start going clear
Add mince and cook until all the pink has gone (add more salt)
Add passata and approx. 1 cup of water (Use the jar to get all the sauce out)
Add tinned tomatoes, tomato paste and more herbs. Add salt & pepper again. Add sugar. Combine thoroughly and bring to the boil.
Simmer for approx. 1.5 hours (covered) stirring occasionally to keep from sticking to the bottom of the pan. Taste each time you stir it and add salt if required.
Tip
Simmering gives the sauce depth of flavor but isn't essential if your in a hurry.
Sugar can't be tasted but helps with the acidity of the tomatoes. This recipe needs lots of salt !!
