    Serves: 6

    • 4 cups plain flour
    • 2 teaspoons salt
    • 1 1/2 tablespoons baking powder
    • 1 tablespoon butter, melted
    • 1 3/4 cups milk, warm
    • canola oil, for frying
    • icing sugar, for dusting

    Preparation:15min  ›  Cook:15min  ›  Extra time:20min resting  ›  Ready in:50min

    1. Place the flour, salt and baking powder into a large bowl then add milk and butter. Stir into a dough.
    2. Tip the dough onto a floured board and knead until smooth, incorporating more flour if needed. Roll into a ball, cover and let rest for 20 minutes.
    3. Once rested pull off golf ball size balls of dough and roll or press to palm size circles.
    4. In a large frypan over a medium temperature, heat enough oil to deep fry the bread, about 5cm deep. Test the temperature by dropping in a little dough, if it bubbles it's ready.
    5. Cook about 4 pieces at a time, turning when brown, should only take a minute or so. If cooking too fast, turn the heat down. Drain on paper towel.
    6. Place on a plate and sprinkle with icing sugar. Serve warm with jam and cream or with nutella and lemon curd.
