Guacamole, the king of the dip world. Originating in Mexico (which happens to be the king of all food, ever), this tasty dip could not be more simple to make. This is a dish that can easily be 'over-done', so many recipes I see out there throwing in spices ingredients i've never even heard of. My advice? Keep it simple. A great guacamole only needs a few ingredients to make it the perfect bowl of heaven. Follow this fool-proof recipe and you'll be well on your way. Enjoy!
1 handful fresh coriander, finely diced (plus few roughly chopped leaves to serve)
1 lime, juiced
1 clove garlic, minced
salt and pepper, to taste
1 fresh red chilli, seeded and finely diced

Remove the stone from the avocados and scoop out the flesh into a bowl. Mash slightly with a fork, ensuring a smooth but still chunky texture. The best way to remove the stone from the avocado is to hit the stone with the blade of the knife and twist until it is released.
Add the onion, tomatoes, coriander, lime juice, garlic, salt, pepper and chilli. Mix further until desired texture is reached.
Taste for further flavourings. Serve with extra coriander leaves and diced chilli for garnish. A great plating idea is to scoop the guacamole back into the empty shell. Photo for inspiration.
