Slice your peach in to 4 horizontal sections, disposing of the stone. Layer them on a spread with your mozzarella and basil leaves (photo for inspiration).
For the sweet balsamic glaze, pop your balsamic vinegar and sugar in a saucepan over medium heat and stir until the sugar dissolves. Bring to the boil and then reduce heat to low and stir occasionally until the glaze thickens and could coat the back over a spoon. Should take around 20 minutes on a simmer.
Serve by drizzling the sweet balsamic glaze over the peach, mozzarella and basil, alongside two lime wedges and an optional mixture of breadcrumbs and Parmesan cheese.
