Crunchy and delicious, who doesn't love savoury crackers? Here's an Italian inspired recipe, that uses the best extra virgin olive oil. Healthier than the shop bought ones but just as versatile to serve with cheese, pickled vegetables or salami.
300g plain flour
70g extra virgin olive oil
40g sesame seeds

In a large bowl sift the flour with salt. Make a well and pour in the water and oil. Mix flour and liquid to reach the consistency of a dough.
Sprinkle the sesame seed on a clean working surface. Transfer the dough to the work surface and knead vigorously for few minutes, incorporating the seeds until the dough is smooth and soft. Shape into a ball with your hands, cover with a towel and let stand for 10 minutes.
Preheat oven to 180 degrees C. Brush a baking tray with some olive oil.
Divide the dough in 4 pieces and roll out each piece into a 1 to 2mm thick rectangle, the size of the baking tray. Transfer the first rectangle to the baking tray and with a fluted pastry wheel cut 5x10cm rectangles and prick with a fork.
Bake in preheated oven for 10 to 12 minutes until crisp. Remove from the oven and cool a bit in the baking tray and then transfer to a cooling rack to cool completely. Proceed in the same way with the 3 remaining rectangles of dough. Serve or store in an airtight box.
Of course sesame seeds are totally optional: Replace them with poppy seeds, toasted rosemary or dried onion.
