Thai Rice with Vegetables

    I love rice, but it has so many calories that I often don't use it when I want to make a low calorie meal. This dish solves that problem. The combination of rice and vegetables makes a very generous serving, and it is so flavoursome that it stands on it's own as a vegetarian meal. There are so many options for serving THAI RICE WITH VEGETABLES. Use as a side dish with any of the other delicious recipes on Calories Counted Curries. Or as I said before, you could serve it as a vegetarian meal, perhaps adding chick peas to provide protein. For non-vegetarians add cooked chicken to make it a complete meal.

    Serves: 2 

    • 100g basmati rice
    • olive oil spray
    • 1 medium onion (100g), sliced
    • 1 clove garlic, crushed
    • 50g carrots, cut into matchsticks
    • 100g snow peas, sliced diagonally
    • 50g mushrooms, chopped
    • 50g spring onions, sliced diagonally
    • 1 tablespoon light soy sauce
    • 1 tablespoon fish sauce
    • 1 tablespoon fresh coriander, chopped

    1. Put the rice in a saucepan, cover with boiling water then place on low heat for 10 minutes or until cooked.
    2. Meanwhile heat a wok or frying pan on medium and lightly spray with olive oil.
    3. Cook onion, garlic and carrot for 5 minutes.
    4. Add snow peas and mushrooms and cook for 2 minutes.
    5. Add spring onions, light soy sauce, fish sauce, coriander and cooked rice. Stir to combine and heat through for 1 minute before serving.


    255 calories per serve. Add 150g of cooked chicken to turn this into a complete meal for two that has only 380 calories per serve.
