    I had bagels to use up and other fresh ingredients so one day I made this for my lunch. The basil brings out so much flavour and the tomatoes add in that freshness along with the creaminess of the avocado. So simple.

    Ingredients
    Serves: 1 

    • 1 begel
    • aioli
    • half avocado, sliced
    • half tomato, sliced
    • salt and pepper, to taste
    • fresh basil leaves
    • balsamic vinegar

    Directions
    Preparation:10min  ›  Ready in:10min 

    1. Toast bagel and spread with aioli or margarine.
    2. Place tomato and avocado onto bagel then season with salt and pepper.
    3. Add basil leaves on top and drizzle balsamic vinegar over it.
    4. In another little bowl add in aioli for dipping into.

    Tip

    You can squirt over some lemon juice, however I find the balsamic vinegar gives it a pleasant sourness.
