Cookies and Cream Ice Cream Cake

    This is the easiest ice cream cake ever, the recipe is easy to follow. The result is so yummy. You can swap the Oreo's for other cookies if desired.

    Makes: 1 cake

    • Cake
    • 1 (205g) packet oreo cream biscuits
    • 2 (400g) tins condensed milk
    • 1 teaspoon vanilla
    • 2 (600ml) cartons thickened cream
    • To Decorate
    • chocolate topping
    • 300ml thickened cream, whipped
    • mini Oreos
    • 2 punnets strawberries, halved

    1. Cake: Cover the base and sides of a 24cm springform tin with plastic wrap, leaving some hanging over edges.
    2. Blitz or finely crush the oreos.
    3. Using an electric mixer, beat the condensed milk, vanilla and cream together until thick. Then stir in the crushed oreos.
    4. Spoon into the prepared tin and smooth top. Freeze for at least 12 hours.
    5. To Decorate: When ready to serve, drizzle top and sides with the chocolate topping. Pipe cream around the edges and place mini oreos. Fill the centre with strawberries. Cut into slices to serve.
