    This paleo recipe is so quick, easy and delicious, plus it is a really great substitute for rice if you're trying to eat low-carb. Your whole family will love it!

    Ingredients
    Serves: 4 

    • 1 large head cauliflower, cut into large chunks
    • 2 tablespoons extra virgin olive oil
    • salt and ground black pepper, to taste

    Directions
    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.
    2. Heat olive oil in a frying pan over medium heat; add cauliflower 'rice', salt and pepper. Cover the frying pan and cook until heated through; 3 to 5 minutes. Remove lid and fluff 'rice' with a fork.

    I thought this would be a little bland but I was wrong. The flavor comes through well. I will definitely be making this again. A cheese grater works well making the cauliflower into rice.  -  16 Sep 2014  (Review from Allrecipes USA and Canada)

    Nice sub for rice, if you are counting calories or carbs. The sauce I used was full flavored, so it masked the cauliflower taste a bit. I added about 2 tablespoons of grated onion to the skillet as the oil heated, and I'm glad I did. I will make this again.     This is very good. I added some onion and garlic to the pan and sauted them then put the Cauliflower in to heat.I made this as a side dish for ground turkey meatloaf. Thank you Lauren S for the recipe, will be making it again..  -  11 Oct 2014  (Review from Allrecipes USA and Canada)
