Paleo Bread

    This grain free bread can be part of a paleo or grain-free lifestyle. Try adding different seasonings to the dough before baking. Works well as a pizza crust or flatbread.

    Serves: 6 

    • 2 large plantains, peeled and broken into chunks
    • 2 eggs
    • 1 tablespoon olive oil, or more, to taste
    • salt, to taste

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat oven to 180 degrees C. Line a baking tray with a silicone baking mat or baking paper.
    2. Blend plantain, eggs, olive oil and salt together in a food processor until smooth, scraping down sides occasionally.
    3. Spread the plantain mixture into a rectangle about 1cm thick onto the prepared baking tray then sprinkle salt over the top.
    4. Bake in the preheated oven until bread is lightly browned and holds together; about 15 minutes. Cool on the tray for about 5 minutes before slicing with a pizza cutter.

    I tried this recipe yesterday since I don't use gluten and am always looking for new gluten-free recipes. This recipe was simple to make and amazingly good. You have to like the flavor of plantains though. I love it! I made it this time with green plantains, which have a more savory flavor. I also added a little bit of garlic powder. The next time I make this recipe, I will try it with ripe plantains and I bet it will also be good, only sweeter. Ripe plantains are very sweet.     Super easy to make but for some reason we couldn't get it "dry" enough. We used a yellow plantain so there was more banana taste than a green one might have had. Used recipe as stated. It wasn't bad and we will try it again. Have been doing a paleo lifestyle the last week and it has been very satisfying.
