These raspberry and white chocolate cookies are easy to make and delicious to boot. Great during raspberry season for using up extra berries.


Makes: 10 cookies

  • 75g butter
  • 75g caster sugar
  • 1 large egg
  • 125g self raising flour
  • 50g white chocolate chips
  • 75g fresh raspberries, chopped

  1. Preheat the oven to 180 degrees C. Line a baking tray with baking paper.
  2. In a bowl beat together the butter and sugar until fluffy, then add your egg to the mixture and beat until pale and creamy.
  3. Sift the flour into the mixture then fold in the chocolate and raspberries. Add more flour if needed.
  4. Put flour on to your hands, then shape your cookies and place on the baking tray.
  5. Bake for 10 to 15 minutes or until golden brown. Remove from the oven and allow to cool on a cooling rack before enjoying.
