Cherry Muffins

    These are light, yummy and delicious and so easy to make. Very light and not too heavy on the tum tum...and the elderly neighbours love them when I cook them and dish them out.

    Makes: 12 muffins

    • 300g self raising flour
    • 170g caster sugar
    • 175g butter or soft margarine
    • 2 eggs, whisked
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking powder
    • 200g glace cherries

    Preparation:20min  ›  Cook:22min  ›  Ready in:42min 

    1. Preheat the oven to 200 degrees C. Line a 12 hole muffin tin with paper cases.
    2. Place all the ingredients, except the cherries, in a large bowl and beat well until smooth. Add the cherries and mix until well incorporated. If the mixture becomes a little dry then you can also add a few teaspoons of milk.
    3. Spoon the mixture into the prepared paper cases, filling up only to half way to ensure plenty of space for a good rise.
    4. Bake for 18 to 22 minutes until risen and golden brown. Remove from the oven and allow to cool.
