This Jack-o'-lantern has seen better days! Great for Halloween parties, just carve a pumpkin according to your favourite design then mix up a batch of this creamy and delicious guacamole. Just before your guests arrive, arrange the guacamole to be pouring out of Jack's mouth. The recipe is easy to to double or triple depending on the size of your party.
2 tablespoons filey disced white onion
4 Serrano peppers or fresh chillies, seeded
4 ripe avocados
salt and pepper, to taste

Juice 2 of the lemons then combine in a small bowl with the onion and allow to soak for at least 1 hour. Drain and set aside.
Meanwhile, carve the pumpkin into a Jack-o'-lantern and set aside.
Into a food processor combine the Serrano peppers or chillies with the juice from the remaining 2 lemons. Slice the avocados in half and remove the stone then scoop the flesh into the food processor, season and add the lemon-infused onions and blend until a smooth creamy consistency is achieved.
Just prior to serving, place the Jack-o'-lantern at one and of a serving platter then spoon the guacamole coming out of the mouth and onto the plate. Surround with tortilla chips.
Wait until the very last minute to serve guacamole so that it does not brown. If you need to store the guacamole in the fridge, place a layer of plastic wrap directly on top the guacamole to form a seal as this will help to prevent browning.
