Walnut and Parsley Pesto

    The simple recipe produces plenty of tasty pesto, it makes the most of fresh seasonal ingredients and locally sourced produce.

    Serves: 4 

    • 100g walnuts, halved
    • 1 clove garlic
    • 100g hard goat's cheese, grated
    • 1 bunch parsley, chopped
    • 150ml rapeseed oil
    • 1/2 lemon, juiced
    • salt and pepper, to taste

    1. Place the walnuts and garlic in a food processor then blitz until well chopped but still retaining some nutty texture. Add the grated cheese and parsley then pulse again.
    2. Begin adding the oil while the food processor is running slowly, drizzle it in until you have a fairly runny paste. Now add the lemon juice.
    3. Taste, season with salt and pepper as needed. Use or store in a sealed container in the fridge until ready.

    Serving Suggestion

    Great served with linguine and some warm crusty bread.
