Vanilla Fig Compote
A fresh fig compote infused with aromatic vanilla. I had some fresh figs from the supermarket that weren't especially tasty, so I made this compote with them. The result was super delicious and the vanilla complements the figs perfectly. Enjoy over Greek yoghurt, spread over a cool cheesecake, or use to sandwich a summery sponge cake.

300 g fig compote
650g fresh figs, peeled
75g soft brown sugar or coconut sugar
1/2 vanilla pod, split

Combine the peeled figs and water in a small saucepan over high heat. Bring to the boil, then reduce to a simmer. Simmer for about 5 minutes, until the figs are soft. Mash figs with a potato masher.
Add the caster sugar and vanilla pod. Gently simmer, stirring, for another few minutes, until the sugar is dissolved and the mixture is thoroughly infused with the vanilla.
Remove from the heat and let cool, then transfer to the fridge to chill completely. Remove the vanilla pod before serving. Coconut Sugar
I used coconut sugar, also called coconut palm sugar, for this recipe, but brown sugar will work just fine. It tastes similar to brown sugar and does not impart any coconut flavour.
