Ulster Pizza

Soda or wheaten farls are toasted and covered in pizza toppings. If you aren't from Northern Ireland and have no clue what the heck a soda or wheaten farl is you can use round burger type baps. Or if you are feeling adventurous you can try and make your own soda farls or wheaten farls.

Ingredients
Makes: 6 Ulster pizzas
- 1 (400g) tin chopped tomatoes
- 1 pinch pepper
- 1/2 teaspoon dried mixed herbs
- 1 dessertspoon tomato purée or tomato sauce
- 3 soda or wheaten farls, sliced lengthways
- 50g cooked ham, diced
- 100g mozzarella or Cheddar cheese, grated

- Empty the tinned chopped tomatoes into a saucepan over a high heat and boil out water until it resembles a moist thick sauce. Reduce the heat and mix in the pepper, herbs, and tomato purée. Simmer for 5 minutes on medium heat then remove from heat.
- Preheat grill to moderate temperature.
- Toast outside of the soda or wheaten farls under the grill. If you like crispy bases you can lightly toast inside.
Spread the tomato mixture over the untoasted side then sprinkle over the cheese and ham.- Grill until the cheese is completely melted or bubbling and golden brown. Remove from the grill and serve immediately.
