I wanted something different to top my sultana and ginger muffins and came up with this yummy butterscotch frosting.


Serves: 12 

  • 220g brown sugar
  • 110g butter
  • 60ml milk or cream
  • 1 large tablespoon butterscotch syrup or golden syrup
  • 1/4 teaspoon salt
  • 130g icing sugar

Preparation:5min  ›  Cook:3min  ›  Ready in:8min 

  1. In a saucepan over a high heat bring all of the ingredients, except the icing sugar, to the boil for 3 minutes. Remove from the heat and sift in the icing sugar, mix until smooth.
  2. Allow to cool slightly and spoon over muffins or cakes. Serve when set.
