Sugar Free Chocolate Chip Cookies

    Makes: 2 to 3 dozen

    • Homemade Chocolate
    • 5 tablespoons powdered milk
    • 25g powdered sweetener
    • 65g cocoa powder
    • 250g Copha vegetable fat, or cocoa butter
    • Cookies
    • 75g powdered sweetener
    • 250g butter, softened
    • 100g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 2 eggs
    • 1 teaspoon vanilla extract or essence
    • 250g porridge oats

    1. Homemade Chocolate: Mix the milk powder, sweetener and the cocoa powder in a bowl. On very low heat melt the Copha and slowly it over the dry mixture. Once smooth, pour it over baking paper in a tin. Place it in the fridge until hard.
    2. Cookies: Preheat the oven to 180 degrees C. Line a baking tray with baking paper.
    3. Mix the sweetener powder with the butter. Once there is a nice creamy mixture add the flour, baking powder, salt, eggs, vanilla and porridge oats. Mix all very well.
    4. Chop the chocolate into bits, smaller or bigger as you please, and mix it with the cookie mixture.
    5. Shape the cookies with a spoon and place on the prepared baking tray. Bake cookies in the preheated oven until golden and set, about 10 to 12 minutes.
