Lemon and Herb Zucchini Saute

    A quick and tasty way to enjoy some of your zucchini mountain. Use your favourite herbs, almost anything goes. I had some thyme and sage.

    Serves: 4 

    • 3 or 4 zucchini
    • 1 tablespoon olive oil
    • 30g butter
    • 1 tablespoon fresh chopped herbs
    • 1/2 lemon, juiced

    1. Thinly slice the zucchini into long strips using a grater, mandoline or sharp knife. Aim to produce slices that are only 1-2mm thick.
    2. Put the oil and butter in a heavy frypan and heat on medium. When the oil is hot add the sliced zucchini and saute until softened, stirring occasionally. This takes only 2 to 3 minutes but a bit longer if you have more zucchini.
    3. Add the herbs and squeeze in the juice of half a lemon. Stir to mix and transfer to a serving dish. Grind on some black pepper.
