    A very easy way to make fantastic rock cakes for everyone to enjoy. This mix will make approximately 8 buns.

    Makes: 8 rock cakes

    • 225g self raising flour
    • 110g caster sugar
    • 110g butter or margarine
    • 110g raisins
    • 1 medium egg
    • glace cherries, optional

    Preparation:10min  ›  Cook:20min  ›  Extra time:30min marinating  ›  Ready in:1hour 

    1. Preheat oven to 200 degrees C. Line a baking tray with baking paper.
    2. Put flour, sugar and butter into a medium sized mixing bowl then mix to a fine crumble. Add raisins, egg and cherries then mix well into a dough like mix.
    3. Place balls of dough onto the tray leaving room between each ball as they will spread a bit in the oven.
    4. Bake for 15 to 20 minutes or until nicely browned. Remove from oven and transfer to a cooling rack.
