Spicy Cuban Bloody Mary Prawn Cocktail

    Serves: 4 

    • 225g prawns, shelled and cleaned
    • 1 teaspoon adobo with habanero, or similar seasoning
    • 15g butter
    • 2 measures vodka
    • 1/2 head lettuce, sliced
    • 1/2 avocado, sliced
    • 450ml cold tomato juice
    • 2 splashes Worcestershire sauce
    • 1 chilli, sliced, optional
    • 1/4 teaspoon celery seed
    • 4 drops Tabasco
    • 1 stick celery, quartered
    • 1 lemon, sliced

    1. Coat the prawns in the adobo with habanero. Heat the butter in a frying pan, add the prawns and 1 measure of vodka. Cook for 5 to 6 minutes, until the prawns are pink. Remove from heat.
    2. Place lettuce at the bottom of a serving glass. Top with some prawns, then a layer of avocado, then more prawns, then more avocado.
    3. Mix cold tomato juice, remaining measure of vodka, Worcestershire sauce, sliced chilli, celery seed and Tabasco. Pour the mixture into your glasses. Decorate with a celery stick and lemon slices.
