Torticas De Coco (Cuban Coconut Meringue Snack Bars)

    Makes: 36 torticas de coco

    • 2 egg whites
    • 225g caster sugar
    • 55g cornflakes
    • 145g chopped raisins or sultanas
    • 60g chopped nuts
    • 75g coconut flakes
    • 1/2 teaspoon vanilla extract or essence
    • 1/2 teaspoon coconut extract

    1. Preheat the oven to 190 degrees C. Grease a baking tray.
    2. Whisk the egg whites until light and fluffy. Slowly fold in sugar until egg whites become stiff and glossy. Fold in remaining ingredients slowly.
    3. Spoon the mixture into individual teaspoon-sized lumps onto the prepared baking tray.
    4. Bake in the preheated oven for 15 to 20 minutes and allow to cool before serving.
