Fruity Lemon Curd

    This delicious lemon curd is easy to make and will be ready before you know it. Make it ahead of time and use in cakes, tarts or your favourite dessert.

    Serves: 8 

    • 2 lemons, zested and juiced
    • 225g sugar
    • 140g butter
    • 2 eggs

    1. In a large saucepan over a medium heat, combine the lemon zest and juice together with the sugar and butter until the butter melts and the sugar dissolves. Remove from the heat.
    2. In a bowl, lightly beat the eggs and add a ladle of the hot lemon butter mixture. Stir well than add the remainder of the lemon mixture.
    3. Strain the mixture into a clean saucepan and return to the heat. Cook gently and stir frequently until the mixture thickens.
    4. Spoon the lemon curd while hot into sterilised jars to store.
