Courgette Soup (Zucchini Soup)

    What better way to enjoy the abundance of courgette from the summer garden! Creamy, light and delicious this is the perfect lunch or dinner soup starter.

    Serves: 4 

    • 60g butter
    • 450g courgettes, sliced thinly
    • 1 tablespoon plain flour
    • 900ml chicken stock
    • 2 tablespoons cream
    • salt and pepper, to taste

    1. In a saucepan over a medium heat, melt the butter and gently cook and stir the courgettes until soft, about 5 minutes.
    2. Stir in flour and cook for 1 minute. Mix in the stock and bring to the boil then reduce the heat and simmer for 15 to 20 minutes.
    3. In a food processor, or using a handheld liquidiser, puree the soup until smooth. Return to the heat and stir in cream, salt and pepper. Ladle into warm bowls and serve.
