Strawberry and Yoghurt Cake

    A wonderful and refreshing strawberry cake recipe made with sponge fingers, white chocolate, soured cream and yoghurt.

    Makes: 1 cake

    • Filling
    • 200g white chocolate
    • 200ml sour cream
    • 20g gelatine
    • 1 pack of sponge fingers (200g)
    • 600ml yoghurt
    • 500g strawberries
    • 200ml thickened cream
    • Syrup
    • 225ml water
    • 2 tablespoons sugar
    • 1 teaspoon vanilla extract or essence
    • 1 teaspoon cognac

    1. Filling: Start by melting the chocolate with the sour cream in a bowl over a saucepan with boiling water, being careful that the bottom of the bowl doesn't touch the water.
    2. Leave the melted chocolate to cool down for a bit and in the meantime hydrate the gelatine as it says on the pack. When this is done add it to the chocolate and mix well.
    3. Cover the bowl with plastic wrap and put it in the fridge for an hour.
    4. Take the sour cream mixture out of the fridge, remove the plastic wrap and mix it slowly for a minute, then add the yoghurt and mix for another minute.
    5. Cut the strawberries in small pieces (save 100g for decorating) then add them to the cream and mix everything together.
    6. Syrup: Make a syrup with the water, sugar, vanilla and cognac (if you want an added kick) in a saucepan on a low heat until the sugar is melted. Leave it to cool down for a bit before using.
    7. To Assemble: Cover the inside of a round cake tin (21cm in diameter) with plastic wrap, dip the sponge fingers, one by one, in the syrup and cover the walls of the tin with them.
    8. Pour the soured cream mixture in the middle of the sponge fingers (it will fill 3/4 of the cake height) cover with plastic wrap and put in the fridge until the next day.
    9. Take the cake out of the fridge, lift it up from the tin with the help of the plastic wrap, put it on a plate and remove the plastic wrap. Whisk the cream and spread it on the top of the cake.
    10. Decorate with the rest of the strawberries and it is ready to serve.
