    It had been a week since I've last made something sweet, and because Sunday was a rainy day and I didn't have a lot to do I thought, I'll make a delicious dessert. Looking through the cupboards I realised we have quite a lot of chocolate and since I prefer my chocolate in cakes I decided to make these incredibly delicious muffins.

    Ingredients
    Makes: 12 muffins

    • 250g self raising flour
    • 2 tablespoons unsweetened cocoa powder
    • 2 teaspoons baking powder
    • 175g caster sugar
    • 100ml oil
    • 175ml milk
    • 2 teaspoons vanilla extract or essence
    • 2 eggs
    • 1 chocolate bar

    Directions
    Preparation:10min  ›  Cook:20min  ›  Extra time:30min marinating  ›  Ready in:1hour 

    1. Preheat the oven to 180 degrees C.
    2. Mix the flour with the cocoa, baking powder and caster sugar.
    3. Add the oil, the milk and vanilla, then fold it in with a wooden spoon until it forms a soft dough.
    4. Beat the eggs and mix with the dough until you get a creamy, fluffy mixture.
    5. Crush the chocolate into small pieces or cut them with a knife and add them to the muffin mixture.
    6. Put the paper cases into the muffin tray and spoon the chocolate mixture into them.
    7. Bake them in a preheated oven until brown and fluffy, about 20 minutes.
    8. Leave to cool for about 5 minutes, then place them on a wire rack and leave until cold.
