Despite the name, pasta flora, this is not a pasta dish! Pasta flora is actually a well loved Greek jam tart, made with whatever jam you fancy. Greeks aren't big on breakfast, but a slice of this is a favourite mid-morning.
250g plain flour
100g caster sugar
225g unsalted butter
1 teaspoon vanilla extract, or essence
1 egg yolk
1/2 lemon, juiced
300g jam of your choice

Combine the flour and sugar. Rub in the butter. Add the vanilla, egg yolk and lemon juice. Work together into a ball, adding 1 tablespoon of water to combine (only if necessary). Allow the pastry to rest for 20 minutes.
Preheat the oven to 180 degrees C.
Press half of the pastry into the bottom of a 20cm square baking tin. Spread the jam over the top of the pastry. Take the remaining pastry and roll pieces into ropes. Take the ropes to make a lattice pattern on top of the jam.
Bake in the preheated oven for 30 minutes, or until pastry is golden. Allow to cool before cutting and serving.
