Coffee Cupcakes

    • Cupcakes
    • 11/3 cups plain flour
    • 1/3 cup of cocoa powder
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 cup milk
    • 1/2 strong brewed cup coffee, cold
    • 1/4 teaspoon expresso powder
    • 1 teaspoon vanilla essence
    • 1/2 cup butter
    • 1/2 cup white sugar
    • 1/2 cup brown sugar
    • Icing
    • 1 cup butter
    • 2 1/2 cup icing sugar
    • 1 1/2 teaspoon vanilla
    • 1 1/2 teaspoon expresso
    • 1 teaspoon boiling water
    • 1/2 teaspoon milk

    1. Cupcakes: Preheat oven 180 degrees. Line muffin tray with paper liners.
    2. Mix all dry ingredients.
    3. Beat in butter until the mixture is light and fluffy. Add cold brewed coffee then stir until combined. Add egg then stir until combined.
    4. Add the mixture to the prepared muffin tray. Using a soup ladle can make this task easier.
    5. Cook for 20 minutes or until skewer comes out clean. Allow to cool before icing.
    6. Icing: Beat the butter until fluffy. Add the icing sugar then beat on high until combined.
    7. In a separate bowl mix the vanilla, coffee, water and milk until dissolved. Add this to the sugar and butter then beat on high until combined. Ice the cakes!
