Paleo Sausage Stew

    This is a classic favourite sausage recipe that has a few tweaks that make it perfect for my paleo friends without my other friends even suspecting.

    Serves: 4 

    • 500g paleo sausages
    • 1 onion, sliced
    • 4 cloves garlic
    • 4 tomatoes, diced (remove skins if tough)
    • 2 carrots, grated
    • 1 cup of cold water
    • 1 tablespoon tomato sauce
    • 1 tablespoon vinegar
    • salt, to taste
    • 4 serves steamed vegetable such as sweet potato, carrot, cabbage and similar

    1. In a frying pan gently saute the sausages until cooked through. Remove from the frying pan. Cut into bite size pieces.
    2. In a frying pan now saute the onion, carrot and garlic until cooked. Return the sausage.
    3. In a bowl combine the water, tomato sauce, vinegar and salt. Add the mixture to the frying pan leave to simmer and reduce slightly.
    4. While simmering prepare the vegetables. Either stir through the sausage stew or serve the sausage over the vegetables like a meaty sauce.

    There are a lot of good paleo recipes available otherwise you can substitute for additional tomatoes.
