In a zip-lock bag add the chicken, olive oil, chilli flakes and herbs. Massage to ensure the ingredients are combined and covering all the chicken. Refrigerate until needed, at least 4 hours if possible.
Heat the BBQ or grill pan to a medium heat. Add the chicken slices and cook for 5 minutes, then turn to cook the other side until cooked through. Move to a plate to rest with a slice of cheese on each, the residual heat will be enough to soften slightly.
Cut the rolls in half then briefly toast each one on the grill plate until lightly browned.
Make the burgers on the rolls with the chicken, salad and condiments of choice.
