Chicken Sausages a'la Hombre

    I purchased a book on the web called "The Flavour Theasaurus" and I hadn't tasted some of these flavours together before. I decided that chicken thighs would add more flavour than breast and so it was born this recipe.

    Serves: 4 

    • 500g chicken thigh mince
    • 200g prosciutto
    • 5 pieces roasted red pepper, diced
    • garlic, diced
    • 100g goats cheese
    • 1 lemon, zested
    • 2 tablespoons chopped fresh thyme
    • 1 egg lightly beaten
    • fresh breadcrumbs, to coat

    1. Place the mince in bowl then add the chopped prosciutto, pepper, garlic, goats cheese, lemon zest and thyme. Mix well then place in fridge for 24 hours to macerate.
    2. When ready to cook, roll the mince out into sausage shapes then dip in the beaten egg then roll in the breadcrumbs.
    3. You can deep fry, shallow fry, or spray then bake. Or you could roll in puff pastry and make sausage rolls or even cut them up smaller and serve as finger food.
