Colourful Gingerbread Men

    The smarties used on these gingerbread men add some colour to the biscuit and a little touch of sweetness.

    Serves: 10 

    • 125g softened butter
    • 100g brown sugar
    • 200g golden syrup
    • 350g plain flour
    • 2 teaspoons ground ginger
    • 1 teaspoon bicarb soda
    • 1 packet smarties

    1. Preheat the oven to 180 degrees C. Prepare a baking tray with baking paper.
    2. Beat together the butter and sugar using electric beaters until light and creamy. Stir in the golden syrup.
    3. Sift the flour, ginger and bicarb soda together then combine with the butter/sugar mixture.
    4. Mix until a rough crumb begins to form then work the mixture into a smooth dough using your hands. Refrigerate the dough for 15 minutes or until firm.
    5. Roll out the dough until about 4mm thick, then cut out the men shapes using a biscuit cutter.
    6. Place onto the prepared baking tray at least 1cm apart then add the smarties to make buttons.
    7. Bake for 8-10 minutes until golden brown. Let cool on trays for a minute or two before removing to cool completely on cake racks.
