Banana and Chocolate Loaf

I first had this in Fiji and was expecting a rye bread but got a chocolate banana bread with cinnamon undertones, I was pleasantly surprised and went back for more.

Serves: 24 

  • 250g margarine, softened
  • 2 cups (440g) white sugar
  • 4 eggs
  • 6 bananas, mashed
  • 3 cups (375g) plain flour
  • 2 teaspoons cinnamon
  • 2 teaspoons bicarb soda
  • 1/4 cup (30g) cocoa powder
  • 1 cup light sour cream

Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

  1. Preheat oven to 180 degrees C. Lightly grease two 23x13cm loaf tins.
  2. In a large bowl, cream together margarine, sugar and eggs. Stir in bananas.
  3. Sift in flour, cinnamon, bicarb soda and cocoa then mix well. Blend in sour cream. Pour the batter into prepared cake tins.
  4. Bake in preheated oven for 60 minutes or until a toothpick inserted into centre of loaf comes out clean.
