Apple Pound Cake

    I love this pound cake that has fresh apples added at just prior to baking. It would probably work with other fruit also.

    Makes: 1 loaf

    • 2 Granny Smith apples
    • 1/2 lemon, juiced
    • 1 teaspoon cinnamon
    • 4 eggs
    • 200g caster sugar
    • 200g butter
    • 200g self raising flour

    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease and line a loaf tin.
    2. Peel, core and finely dice the apples. Toss the apples in the lemon juice and the cinnamon then set aside.
    3. Place the eggs and sugar in a cake mixer then beat until very light and fluffy. Melt the butter and slowly pour into egg mixture. Sift in the flour then fold in carefully until combined.
    4. Pour the cake mixture into the prepared cake tin then carefully scatter the apple pieces over the top.
    5. Bake for 45 minutes or until a skewer inserted into the centre comes out clean. Cool for 10 minutes before removing from the cake tin.
