Leftover Bubble and Squeak

    The main reason to have a roast is so you can make bubble and squeek the next day. The more leftovers the better, and make sure you have cabbage as a side as it is great in this recipe.

    Serves: 4 

    • 1 large onion, peeled and sliced
    • leftover meat from a roast, cubed
    • leftover potatoes, diced
    • leftover vegetables such as broccoli, carrot, peas and similar
    • leftover gravy
    • salt and pepper, to taste

    1. In a saucepan, saute the onion until soft and translucent. Add the meat and ensure heated through.
    2. Add the vegetables, and heat gently, the more you stir, the more broken up the result will be.
    3. Stir through the gravy then taste, add salt and pepper if required.
