This whole Paleo thing is easy, and even easier if you have a slow cooker! Tastes great, wouldn't even know there was a diet aspect at all.

Serves: 4 

  • 1 to 1 1/2 kg rump
  • 1 cup beef stock
  • 1/3 cup balsamic vinegar
  • 1/3 cup coconut aminos
  • 1 onion, finely diced
  • 4 garlic cloves, crushed
  • sea salt and black pepper, to taste
  • 2 carrots
  • 2 sweet potatoes
  • 2 parsnips

Preparation:10min  ›  Cook:5hours  ›  Ready in:5hours10min 

  1. In your slow cooker add the rump roast, beef stock, balsamic vinegar, coconut aminos, onion, garlic, salt and pepper.
  2. Put on medium and cook for 4 hours.
  3. Peel and cube the carrots, sweet potato and parsnips into even sizes, about 2cm square. Add to the slow cooker and continue to cook for 1 hour. When the meat and vegetables are tender, serve.
