Butter Biscuit Christmas Trees

    This really is just another biscuit cutter shaped butter cookie, just the shapes happen to form a Christmas tree. You can buy cutters to do this or just cut the shapes by hand.

    Serves: 15 

    • 2 cups (250g) self raising flour
    • pinch of salt
    • 180g butter, softened
    • 1/2 cup (125g) sugar
    • 1 beaten egg

    1. Preheat oven to 180 degrees C.
    2. Sift the flour and salt into a bowl, then rub in the butter until it resembles breadcrumbs.
    3. Add sugar and beaten egg and mix into a stiff dough, turn out onto a floured surface and knead gently until smooth.
    4. Wrap in plastic wrap and chill in the fridge for about 30 minutes.
    5. Roll out onto a floured surface about 5mm thick, and cut into the Christmas tree shaped biscuits. Use a Christmas tree cutter then cut alternate groves from base to middle and and middle to top.
    6. Place on a greased baking tray and place in oven at 180 degrees C for about 12-15 minutes until golden.
    7. When cooled slot the trees together and decorate as desired.
