This is a wonderful dhal recipe that is perfect as part of a larger Indian dinner spread, the longer you can simmer it the better it gets.
1 tablespoon ghee, or other available oil
2 onions, diced
4 cloves garlic, crushed
1/2 cup (90g) uncooked lentils of choice
2 cups (500ml) water
1 teaspoon salt
1 teaspoon ground cumin
freshly ground black pepper, to taste
- Heat the ghee in a saucepan over medium heat. Fry onion until they are transparent. Add garlic and fry further 1-2 minutes.
- Add the lentils and water to the saucepan. Bring mixture to the boil. Cover and simmer for about 20 minutes until lentils are soft (this may take less time, depending on your water and the lentils).
- Add salt, pepper and cumin to the cooked lentils. Cover and simmer until heated through, about 10 minutes. Taste and adjust seasoning if required.
