This recipe is for freezing. Make it when the tomatoes are ripe and then you can have summery soup any time you like.


Makes: 2 litres soup

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 4 kg large tomatoes, quartered
  • 2 cloves garlic, peeled
  • 1 sprig lovage, leaves picked
  • 1 bunch fresh oregano, leaves picked
  • 1 bunch fresh thyme, leaves picked
  • 3 tablespoons dried basil
  • 1 tablespoon balsamic vinegar

  1. Heat oil in a large saucepan and saute the onion.
  2. Add the tomatoes, garlic and herbs. Simmer 45 minutes uncovered until the tomatoes break down. Add balsamic vinegar. Blend the soup or press through a sieve, let cool then freeze in freezer containers.
  3. Season with salt and pepper before serving.
