Carrot Ginger Soup

This is a favourite recipe for carrot soup, quick, easy and tastes delicious. You can also add a little rosemary or other herbs if you want.


Serves: 4 

  • 1 tablespoon oil
  • 2 onions, finely diced
  • 1 clove garlic, minced
  • 400g carrots, peeled and diced
  • 600ml vegetable stock
  • 1 teaspoon grated fresh ginger
  • salt and pepper, to taste
  • pinch sugar
  • 200ml light thickened cream

  1. Heat oil in a saucepan and saute the onions and garlic until translucent. Add carrots and saute briefly.
  2. Pour in the vegetable stock and bring to a simmer. Add grated ginger, salt, pepper and sugar to taste. Cover and simmer 15 minutes, then puree the soup with a stick blender.
  3. Mix in the cream, taste for seasoning and serve.
