Salmon Spinach Soup

    If you usually make fish soup with tinned salmon, try using a fillet. It doesn't take any longer and the taste is so much better.

    Serves: 4 

    • 4 cups (1 litre) water
    • 2 potatoes, peeled and diced
    • 2 bay leaves
    • salt and pepper, to taste
    • 2 tablespoons olive oil
    • 1 onion, diced
    • 1 carrot, grated
    • 200g fresh salmon, diced
    • 150g frozen spinach

    1. Bring the water to a boil in a saucepan and add potatoes, bay leaves, salt and pepper. Simmer until potatoes are almost done.
    2. Heat the olive oil and fry onion and carrot about five minutes. Add the salmon and fry a few more minutes until cooked through. Using a wooden spoon, mash the fish a bit.
    3. Add the fish mixture to the soup and simmer until potatoes are done. Add the spinach, heat through and serve.
