This is a traditional clam chowder with milk and cream. It is easy to make with tinned clams which you can sometimes get at the supermarket.


Serves: 4 

  • 150g bacon, diced
  • 1 onion, diced
  • 5 potatoes, peeled and diced
  • 1 cup water
  • 2 cups milk
  • salt and pepper, to taste
  • 2 bay leaves
  • 2 (150g) tins clams
  • 1 cup cream
  • 1 bunch fresh parsley, chopped

  1. In a heavy saucepan, fry the bacon. Add the onion and fry until transparent.
  2. Add the potatoes and lightly fry. Pour in the water and milk. Add salt, pepper and bay leaves and simmer 15 minutes until potatoes are tender.
  3. Finely dice the clams and add to the soup with their juices. Pour in the cream and bring to a simmer. Serve, garnished with parsley.
