Chicken Soup with Homemade Noodles

A simple and delicious soup with homemade noodles. Homemade noodles are easy to make and have an unbeatable texture and flavour.


Serves: 4 

  • Noodles
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 2 tablespoons water
  • 1 cup flour
  • Soup
  • 500g chicken pieces
  • 8 cups (2 litres) water
  • salt and pepper, to taste
  • fresh herbs, e.g. dill or parsley

  1. Stir flour onto a work surface. Make a well in the centre and break in the egg and add water, salt and paprika. Stir together then knead until smooth.
  2. Roll out the dough on a floured surface to 2mm thickness. Cut into thin strips with a sharp knife.
  3. You can cook the noodles immediately or let dry on a hanger. You can leave them on the table up to 40 minutes.
  4. Soup:

  5. Place the chicken in a saucepan with 8 cups water. Bring to a boil and skim any foam. Reduce heat, season with salt and gently simmer 45 minutes.
  6. Remove the chicken and pick the meat, discarding bones and skin.
  7. Add the noodles to the simmering soup and cook 5 minutes or until they float up. Season with salt and pepper to taste (I use a lot of pepper).
  8. Return the chicken meat to the soup and serve sprinkled with fresh herbs.
