Red Lentil Soup with Sausage

    This is a great lunch recipe for kids, who love the slices of sausage. You can use any type of sausage you like.

    Serves: 4 

    • 4 cups vegetable stock
    • 4 cups water
    • 250g red lentils
    • 2 potatoes, peeled and diced
    • 1-2 sausages, sliced
    • salt, to taste

    1. In a saucepan, place the stock, water, lentils and potatoes. Simmer, covered, 30 minutes. Let cool.
    2. Blend the soup and return to the heat. Add the sliced sausage and simmer 10 more minutes. Season to taste and serve.
