Curry powder adds a little exotic touch to carrot soup. A bouquet garni is a small herb bouquet normally containing fresh parsley, bay leaf and thyme.


Serves: 4 

  • 1 onion, finely diced
  • a little butter
  • 5 large carrots, peeled and cut into thick slices
  • 1 medium potato, peeled and diced
  • 8 cups (2 litres) vegetable stock
  • bouquet garni
  • 1 teaspoon curry powder
  • 1 tablespoon sour cream
  • parsley, to garnish

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Saute the onion in butter over low heat for 5 minutes. Add carrots and potatoes and saute 7 more minutes. Pour in stock.
  2. Add bouquet garni and curry, then simmer 10 minutes. Remove the bouquet garni.
  3. Blend with a stick blender, then stir in sour cream. Serve, garnished with parsley.
