Chilled Beetroot Soup

    Serves: 4 

    • 1 bunch beetroot with leaves
    • 2 cups water
    • pinch citric acid (or lemon juice)
    • 2 cucumbers, grated
    • 1 bunch radishes, grated
    • 1 bunch chives, chopped
    • 1/2 bunch dill, chopped
    • 600ml natural yoghurt
    • 3-4 tablespoons cream
    • salt and pepper, to taste
    • 2 hard boiled eggs, quartered

    1. Wash the beetroot. Dice the beetroots and chop the leaves. Place into a saucepan with the water and citric acid then simmer 20 minutes.
    2. Add the cucumbers, radishes, chives, dill, yoghurt, cream, salt and pepper. Chill before serving.
    3. Serve garnished with hard boiled egg quarters.
