Vegan Asparagus Soup

    This has to be the perfect vegan soup for two - smooth asparagus and potato, quick to make and delicate tasting.

    Serves: 2 

    • 2 tablespoons olive oil
    • 1 onion shallot, finely diced
    • 1 small potato, peeled and sliced
    • 6 stalks asparagus, peeled and diced
    • 2 cups (500ml) vegetable stock
    • salt and pepper, to taste

    1. Heat the olive oil in a saucepan and fry the shallot until soft. Add potato and stir 2 more minutes. Add asparagus and stock and simmer 15 minutes.
    2. Puree with a hand blender and season to taste with salt and pepper.
